Role Description The South Indian Executive Chef is a full-time, on-site role based in Noida, responsible for overseeing all aspects of South Indian cuisine in the kitchen. This includes designing and updating menus, planning daily specials, and ensuring authentic flavors and presentation across dishes such as dosas, idlis, vadas, curries, and regional specialties. The role involves supervising and training kitchen staff, monitoring food production, maintaining quality standards, and ensuring efficient workflow during service. The chef will manage inventory, oversee food cost and portion control, maintain hygiene and safety standards, and collaborate with management to support events, promotions, and overall brand positioning. Day-to-day tasks also include tasting and quality checks, vendor coordination for key ingredients, and continuous improvement of recipes based on guest feedback.
Qualifications
- Strong expertise in traditional and modern South Indian cuisine, with the ability to create authentic and innovative dishes.
- Proven experience in a leadership role in a professional kitchen, preferably as an Executive Chef or Head Chef in a high-volume restaurant or hospitality venue.
- Knowledge of kitchen operations, including menu planning, food costing, inventory management, and portion control.
- Commitment to food safety, hygiene, and sanitation standards, with familiarity with relevant regulations and best practices.
- Ability to train, mentor, and supervise diverse kitchen teams, promoting a respectful, inclusive, and collaborative work environment.
- Strong organizational and time-management skills, with the ability to handle peak service periods and multiple tasks simultaneously.
- Good communication skills to coordinate effectively with management, service staff, and suppliers.
- Flexibility to work evenings, weekends, and holidays in line with the operational needs of a nightlife and hospitality venue.
- Formal culinary education or certification in culinary arts is preferred, with specific exposure to South Indian regional cuisines considered an advantage.
- Experience in menu development for lounge, club, or premium dining concepts, and openness to adapting traditional dishes for contemporary audiences.
