ate is a set of very different retail cafes across Delhi NCR — glasshouse (Lodhi Art District), greens (Saket), caves (Safdarjung), omakase (Gurugram) — plus ate mini, our quick-format sibling. Each address carries the same DNA but wears its own face. We treat people like regulars, not covers.
We're looking for someone to own how all of it actually runs.
The Role:
This isn't a desk job. You'll be in the cafes — on the floor at service, in the kitchen at prep, at the counter when it's slammed on a Sunday. The measure of success is simple: a guest should feel equally looked after at any ate cafe, on any day, whether or not a founder is in the building.
What you'll own:
- Operations across all cafes and ate mini — service flow, floor standards, hygiene, food safety, licences, maintenance
- The numbers — revenue targets, food and labour cost, wastage, covers, ATV. A clean weekly MIS to the founders, no dressing it up
- Inventory & vendors — par levels, purchase discipline, no stock-outs, no dead cash
- The team — lead cafe managers and frontline staff; hire, roster, train, review
- Guest experience — resolve escalations, then fix the cause
- ate mini — throughput, packaging discipline, delivery quality where the guest never sees the cafe
- Growth readiness — get new cafes operational and stable, without flattening what makes each one different
What we're looking for:
- 5–8 years in F&B operations, with 2–3 years running multiple outlets
- Premium casual dining, specialty coffee, or a design-led group. Hotel-trained welcome; hotel-rigid isn't
- Comfortable with a P&L — you can spot the leak and explain it in plain language
- Hands-on. You'd rather fix it than escalate it
- Delhi NCR based. Coffee literacy is a real plus
What won't work here: needing a thick SOP binder to make a decision, or thinking standardisation means making every cafe the same. We want judgement, not compliance.
