About the Business
The organisation is one of Delhi NCR’s leading mass-premium bakery and dessert brands. It operates a fast-moving product-drop model, regularly introducing trend-led desserts and making them available at scale through a technology-enabled delivery network.
The business currently fulfils more than 5,000 orders and sells over 15,000 cakes and desserts each day. Its operating network includes 40 dark stores across Delhi NCR and select North Indian markets, three spoke kitchens supporting custom cakes and D2C operations, a central kitchen in Noida, and a team of more than 300 employees.
The organisation is now entering its next phase of growth, with a national, multi-format expansion beginning in South India.
The Opportunity
The Regional Head – South will build and own the organisation’s South India business. The immediate mandate is to establish the Bengaluru central kitchen and its supporting network of dark stores, take the regional business from launch to profitability, and subsequently expand the operating model into Hyderabad and Chennai.
This is a hands-on business-building role with complete regional accountability. The leader will own the South India P&L, build the operating team, launch new markets and ensure that every unit meets the organisation’s standards for product quality, customer experience and commercial performance.
Key Responsibilities
Own the complete P&L for the Bengaluru central kitchen and all outlets across the South region, with accountability for revenue, operating costs, contribution margins and profitability.
Lead the setup, launch and commercial ramp-up of the Bengaluru central kitchen and its supporting dark-store network.
Build the regional operating structure across production, area operations, procurement, supply planning, workforce planning and local recruitment.
Launch Hyderabad, Chennai and other priority South Indian markets using a repeatable expansion playbook.
Make commercially sound decisions regarding market entry, capacity creation, infrastructure requirements and resource deployment.
Translate the organisation’s operating standards into strong regional execution across production, food quality, product availability, service levels and customer experience.
Manage a perishable-product operating model with close control over food costs, wastage, inventory, fulfilment, capacity utilisation and product quality.
Establish operating-review mechanisms and track unit-level metrics covering outlet economics, productivity, payback periods, ramp-up performance and profitability.
Partner with central teams across operations, supply chain, procurement, product, finance, people and technology.
Develop local vendor, supplier and talent networks that meet the organisation’s quality, service and commercial standards.
Recruit, develop and lead the regional leadership and operating teams with clearly defined responsibilities, goals and performance expectations.
Ensure that the South India business operates with strong ownership and limited dependence on the head office while remaining aligned with central leadership.
Candidate Profile
Proven experience as a regional, city or business leader within food, QSR, cloud kitchens, food retail, bakery, cafés or another operationally intensive consumer business.
Demonstrated ownership of a market or regional P&L, including revenue growth, operating costs, contribution margins and profitability.
Direct experience launching a new market, central kitchen, operating cluster or multi-unit network, rather than only inheriting an established business.
Strong familiarity with South Indian markets, particularly Bengaluru. Exposure to Hyderabad and Chennai would be highly desirable.
Sound understanding of food operations, perishable supply chains, central-kitchen operations, store or dark-store economics and multi-unit execution.
Experience managing procurement, inventory, food costs, wastage, fulfilment, capacity planning and operational productivity.
Ability to recruit, structure and lead cross-functional regional teams in a high-growth environment.
Entrepreneurial and hands-on approach, with the judgement to move effectively between strategic decision-making and ground-level execution.
Comfortable operating with a high degree of ownership and limited head-office dependency while maintaining strong alignment with central leadership.
Strong analytical, commercial, people-management and stakeholder-management capabilities.
