Role Description This is a full-time, on-site Halwai Chef role based at Treat Hotels & Resorts in Kumbhalgarh. The Halwai Chef will be responsible for preparing a wide range of traditional Indian sweets and desserts, ensuring consistent taste, presentation, and quality in line with brand standards. Day-to-day tasks include planning and executing dessert menus for buffets, banquets, and special events, managing production volumes, and maintaining hygiene and safety standards in the mithai and dessert section. The role involves coordinating with the Executive Chef and banquet team on event requirements, managing ingredients and inventory, and training and guiding junior kitchen team members in traditional methods and standard recipes. The Halwai Chef will also contribute to new product ideas and seasonal offerings that enhance guest experience and align with regional tastes.
Qualifications
- Strong expertise in traditional Indian sweets and desserts, including preparation, finishing, and regional specialties.
- Experience in high-volume hotel, resort, or banquet operations, preferably in destination wedding or large event settings.
- Knowledge of food safety, hygiene practices, and kitchen sanitation standards, with the ability to implement and monitor compliance.
- Ability to manage production planning, portion control, and inventory for the Halwai section to minimize waste and ensure availability.
- Skill in menu development, including festive, seasonal, and regional dessert offerings that appeal to diverse guest profiles.
- Capability to lead and train junior staff, foster teamwork, and coordinate with culinary and service teams for smooth operations.
- Basic culinary education or certified training in Indian sweets and bakery/patisserie is preferred.
- Willingness to work flexible hours, including weekends and event days, and to be based on-site in Kumbhalgarh.
- Previous experience in reputable hotels or resorts and familiarity with destination wedding or MICE catering will be an advantage.
