Job details:
Pizza 4P's is a globally celebrated Japanese-Italian restaurant brand founded on the mission of 'Delivering Wow, Sharing Happiness.' Known for its artisanal pizzas, house-made cheeses, and East-meets-West flavors, 4P's operates across Vietnam, Cambodia, Japan, Indonesia, and India. We are guided by four core values:
- Authenticity – We craft everything with honesty and care.
- Omotenashi – Japanese spirit of wholehearted hospitality.
- Compassion – We lead with empathy, for our team and guests alike.
- Kaizen – A culture of continuous improvement in all we do.
ROLE PURPOSE
The Restaurant Manager holds full ownership and accountability for the day-to-day operations of a Pizza 4P's restaurant, leading the Kitchen, Pizza, Service, Cheese, and GSA (Guest Service Associate) teams as one unified operation. As the direct developer of Assistant Managers and department Leaders, the Restaurant Manager is accountable for the restaurant's people, systems, financial performance, and culture — creating an environment where the restaurant operates at a consistently high level of quality, guest experience, and profitability.
KEY RESPONSIBILITIES
1. Restaurant Operations & Guest Experience
- Own end-to-end daily operations across all departments, ensuring smooth service from opening to closing.
- Monitor guest satisfaction, online reviews, and NPS scores restaurant-wide; lead corrective actions where required.
- Personally handle escalated guest concerns or VIP situations, setting the standard for Omotenashi hospitality.
- Ensure consistent adherence to Pizza 4P's SOPs, hygiene practices, and food safety requirements across every department.
- Maintain the ability to step into kitchen, pizza, or service operations hands-on when needed — diagnose bottlenecks and coach teams to the 4P's standard.
2. Financial & P&L Management
- Own the restaurant's P&L — sales, food cost, labour cost, and overall profitability — against budget and targets.
- Review and approve procurement, cost-control measures, and resource allocation across departments.
- Analyze sales data and guest feedback to develop strategies that drive revenue growth.
- Prepare and present accurate operational and financial reporting to Area/Operations Management.
3. Team Leadership & People Development
- Lead, coach, and evaluate Assistant Managers (Food, Service, Cheese) and the GSA Leader.
- Conduct regular 1-on-1s, performance evaluations, and career development conversations.
- Drive recruitment, onboarding, training, and succession planning in partnership with HR.
- Ensure every department has clear role clarity and a capability map — who does what, and what 'good' looks like.
- Build a strong leadership pipeline and a positive, motivated team culture aligned with 4P's core values.
4. Quality, Compliance & Brand Standards
- Enforce food quality, presentation, and consistency standards across Pizza and Kitchen production.
- Own the restaurant's audit program (food / service / cleanliness / safety) and convert findings into Kaizen action plans.
- Ensure full compliance with statutory regulations, food safety audits, and company policy.
- Safeguard brand reputation through consistent execution of Pizza 4P's standards restaurant-wide.
5. Inventory, Cost & Resource Control
- Oversee restaurant-wide inventory management, waste control, and stock rotation practices.
- Strengthen order accuracy, procurement, and supply chain coordination.
- Optimize shift planning and labour productivity across departments.
- Oversee equipment usage, maintenance scheduling, and investment recommendations.
6. Cross-Department Collaboration & Reporting
- Act as the central point of coordination between Kitchen, Pizza, Service, Cheese teams.
- Partner with HR, SCM, and Admin teams for restaurant-level operational optimization.
- Report performance insights and improvement proposals to Area/Country Manager
- Act as the bridge between frontline reality and company strategy.
7. Continuous Improvement & Kaizen
- Identify and lead restaurant-wide operational improvements in efficiency, quality, and guest experience.
- Champion innovation and best-practice sharing across departments and with peer restaurants.
- Drive adoption of new processes, tools, and company-wide initiatives at the restaurant level.
8. Compliance & Legal Responsibilities
- Ensure full compliance with food safety regulations, labour laws, and occupational health & safety practices.
- Maintain integrity and fairness in scheduling, task assignment, and performance evaluation across all departments.
- Ensure timely completion of all statutory and company-mandated training and certifications restaurant-wide.
ONBOARDING & TRAINING
New joiners will go through a structured 3-month onboarding program:
Month 1: Full cross-department immersion — learning 4P's food and service operations, culture, and quality standards firsthand across different departments
Month 2: Shadow the incumbent Restaurant Manager, taking on progressively more operational and people-leadership responsibility.
Month 3: Transition into independent restaurant management, with mentorship from the Area Manager.
Ongoing: Regular learning sessions, leadership workshops, and Kaizen improvement initiatives.
Output expectation by Month 3: Deliver a restaurant-wide audit checklist, updated SOP pack for any gaps identified, and a weekly business review routine.
