Dilfoods runs a portfolio of delivery-first food brands operated out of cloud kitchens across the city. We build and scale restaurant brands on the aggregator platforms (Swiggy, Zomato and our own channels), obsessing over food quality, delivery speed, and unit economics. As we expand our footprint, we are looking for a senior operator to own everything that happens inside our kitchens and every order that leaves them.
The City Head – Restaurant Operations is the single owner of Dilfoods’ entire kitchen and delivery operation in the city. This is a full P&L leadership role: you are accountable for revenue, cost, quality, and growth across every cloud kitchen we run here. You will lead a team of kitchen managers, shift leads, and staff, and work hand-in-hand with the central supply chain, brand, and marketing teams to hit aggressive growth and profitability targets. Success in this role means our kitchens run like clockwork, our customers get hot, correct, on-time orders every single time, and the city P&L moves in the right direction month after month.
KEY RESPONSIBILITIES
P&L and Business Ownership
Own the full city P&L — top-line revenue, food cost, labour cost, packaging, wastage, and contribution margin across all kitchens.
Set and hit monthly and quarterly targets for orders, revenue, and profitability; build the operating plan to get there.
Drive unit economics at each kitchen: identify loss-making outlets or dayparts and fix them.
Kitchen and Delivery Operations
Ensure every kitchen runs to standard on food quality, hygiene (FSSAI compliance), prep discipline, and order accuracy.
Own operational KPIs end to end: kitchen preparation time (KPT), rejection and error rates, order cancellations, food-ready-on-time, and rider wait times.
Build and enforce SOPs for prep, cooking, packaging, and dispatch; audit adherence relentlessly.
Manage capacity and throughput during peak hours and demand surges so no order is delayed or lost.
Aggregator and Channel Performance
Own the relationship and performance on Swiggy, Zomato, and other channels — ratings, visibility, availability (kitchen uptime), and dispute resolution.
Work with marketing and brand teams on promotions, menu pricing, and listing optimisation to grow orders profitably.
Keep rating, RDR (restaurant-driven cancellations), and availability metrics within target at all times.
Team Leadership
Recruit, train, and lead kitchen managers, shift leads, and kitchen staff across the city.
Build a strong on-ground bench: set performance standards, run reviews, and develop your managers into owners.
Create a culture of accountability, speed, hygiene, and customer obsession on the floor
Supply Chain and Cost Control
Partner with central procurement and supply chain to ensure raw material availability, freshness, and correct inventory at every kitchen.
Control wastage, pilferage, and stock-outs; own inventory accuracy and cost discipline.
Drive vendor and logistics coordination at the city level where required.
Expansion
Identify and launch new kitchens in the city — site evaluation, setup, staffing, and ramp-up to profitability.
Standardise and document playbooks so each new kitchen opens faster and better than the last.
WHAT ARE WE LOOKING FOR
7–12+ years of operations experience, with a strong track record in cloud kitchens, QSR, food delivery, restaurant chains, or high-throughput multi-outlet operations.
Proven experience owning a P&L and delivering both growth and profitability.
Demonstrated ability to manage multiple outlets/kitchens and large on-ground teams simultaneously.
Deep, hands-on understanding of kitchen operations, food quality, hygiene, and delivery-first metrics (KPT, order accuracy, ratings, uptime).
Strong grip on the aggregator ecosystem (Swiggy/Zomato) and how to win on those platforms.
Data-driven operator: comfortable living in dashboards and Excel, using numbers to find and fix problems.
A builder’s mindset — willing to be on the floor, in the kitchen, and in the details, not just in meetings.
Bias for action, high ownership, and the resilience to run a fast-moving, always-on operation.

Experience launching or scaling new kitchen/outlet locations from zero.
Exposure to a high-growth startup or food-tech environment.
Existing network of kitchen talent and vendors in the city.
