Associate Director – Gummies Subject Matter Expert (SME)
Function: R&D – Formulation & Product Development
Reports to: Head of R&D
Location: Mumbai (or as applicable)
Role Purpose
Lead end-to-end gummy platform development — from ingredient science and formulation to scale-up and CDMO execution — serving as the go-to technical expert for all gummy-format innovation across the portfolio. Own the technology roadmap for next-generation delivery systems (e.g., beadlet-in-gummy, functional actives encapsulation) while ensuring formulations meet stability, sensory, regulatory, and cost targets.
Key Responsibilities
Formulation & Technology Development
- Design and execute gummy formulations across pectin, gelatin, and carrageenan-based systems, optimizing for texture, mouthfeel, stability, and active delivery.
- Lead DOE-based studies on fiber systems (inulin/FOS, polydextrose, scFOS, PHGG, GOS, XOS), acid hydrolysis kinetics, and water activity/GAB isotherm modeling.
- Drive advanced delivery formats — beadlet encapsulation, dragée/panning, multi-layer actives — to protect sensitive actives (probiotics, vitamins, minerals, botanicals) from degradation.
- Troubleshoot formulation issues (crystallization, syneresis, active migration, shelf-life instability) across the product lifecycle.
Scale-Up & CDMO Management
- Own tech transfer from lab to pilot to commercial scale across CDMO partners.
- Benchmark and qualify manufacturing routes/equipment for bead and gummy production.
- Conduct CDMO audits (e.g., 21 CFR readiness) and build supplier performance frameworks.
- Manage vendor relationships, NDAs, and IP/exclusivity terms with manufacturing partners.
Regulatory & Quality
- Ensure formulations comply with FSSAI, AYUSH, GCC (UAE/ESMA/GSO), and 21 CFR standards, including claims substantiation and label compliance.
- Own pesticide MRL, heavy metal, and contaminant verification against applicable standards.
- Support stability study design, protocols, and finished goods specifications.
Innovation & IP
- Identify and progress patentable innovations in gummy delivery technology; support prior art searches and patent filing documentation.
- Track emerging ingredient/technology trends (novel actives, encapsulation tech, sweetener systems like thaumatin) via conferences (e.g., CPHI) and supplier scouting.
Cross-Functional Leadership
- Partner with marketing, clinical, regulatory, and supply chain teams to translate science into commercial claims and consumer-facing benefits.
- Mentor junior scientists on gummy formulation science and DOE methodology.
- Present technical findings and roadmaps to leadership.
Required Qualifications
- M.Sc./M.Tech/Ph.D. in Food Technology, Pharmaceutical Sciences, Chemical Engineering, or related field.
- 8–12 years of hands-on gummy/confectionery/nutraceutical formulation experience, with at least 3–5 years in a senior technical or SME capacity.
- Deep expertise in gummy manufacturing processes (depositing, drying, coating) and encapsulation technologies.
- Working knowledge of FSSAI, AYUSH, and international regulatory frameworks (GCC, US 21 CFR).
- Experience managing CDMO relationships and technology transfer.
- Strong grasp of DOE, stability testing, and analytical methods relevant to gummies (moisture/water activity, texture analysis, dissolution).
Preferred
- Experience with functional/nutraceutical actives (probiotics, botanicals, vitamins/minerals, novel sweeteners).
- Prior involvement in IP/patent development for delivery technologies.
- Exposure to D2C or fast-moving consumer health brands.
