JOB TITLE: Prep Cook / Salads
DEPARTMENT: Nutrition Services
JOB SUMMARY:
- Clean and slice fresh produce daily for salad bar and salad station.
- Prepares breakfast, lunch or dinner on occasion.
- Serves steamtable on tray line as needed by supervisors.
- Prepares lunch meats and main dishes, soups, vegetables and hot breads.
- Performs advance preparation of meats and plans breakfast meats for the next day.
- Cleans and washes all equipment used in cooking. Washes and air dries all pans from lunch tray line.
- Keeps own work area clean.
- Attend in-services and other meetings.
- Sweep area.
- Fill and record sanitizer sink log.
- Report in sink thawing under running water to be monitored by the Chef and/or Manager.
- Help with the preparation of small items as assigned by the Chef or Supervisor, i.e. make toast, cold plates, and sandwiches.
- Clean and organize Cook’s line and shelves at end of shift.
- Clean resident steamtables daily.
- Check out with Chef and Supervisor before leaving for the day.
- Other duties as assigned.
Requirements
PERFORMANCE REQUIREMENTS: Responsible for the preparation of meats, main dishes, soups, vegetables, and breads to be served at a stated time.
JOB KNOWLEDGE: Knowledge of basic principles of quantity food cookery and how to use certain equipment: basic knowledge of modified diets.
STANDARDS OF PRODUCTION: Preparation of foods of high quality in specified quantities. Follow ServSafe standards.
EQUIPMENT USED: Food processors, mixer, ovens, ranges, steam-cooker, fryer, meat slicer and Blast Chill.
SUPERVISION: Under general supervision of Chef and Food Service Supervisor. Responsible to Director of Nutrition Services. Gives some supervision to salads/bakers.
PHYSICAL DEMANDS: Standing, walking, stooping, lifting, reaching, adaptive to temperature changes, mentally alert.
REQUIREMENTS: Five years cooking experience. ServSafe Certified. Education – High School graduate. Experience in health care facility desirable – 3 years preferred.
