Role Description T
his is a full-time, on-site Tandoor Chef role based in Chennai. The Tandoor Chef will be responsible for preparing and cooking tandoor-based dishes, including breads, kebabs, and specialty items, while maintaining consistent quality and presentation standards. Daily tasks include marinating ingredients, managing tandoor temperature, monitoring cooking times, and ensuring adherence to recipes and portion guidelines. The role involves coordinating with the kitchen team to plan prep work, manage inventory of tandoor ingredients, and support smooth service during peak hours. The Tandoor Chef will also follow food safety, hygiene, and cleanliness standards, assist in training junior kitchen staff, and contribute ideas to menu development and seasonal specials aligned with the brand’s culinary vision.
Qualifications
- Strong hands-on experience with traditional tandoor equipment, including firing, temperature control, and safe handling of high-heat cooking environments.
- Proficiency in preparing a variety of tandoor dishes such as naan, roti, kulcha, kebabs, and grilled vegetables, with attention to flavor balance and presentation.
- Solid understanding of Indian culinary techniques, spice usage, marination methods, and regional flavor profiles, preferably in a contemporary or modern dining context.
- Knowledge of food safety, hygiene, and kitchen sanitation practices, including proper storage, handling, and labeling of ingredients.
- Experience working in a professional kitchen or restaurant, with the ability to perform under pressure during busy service hours and maintain consistency.
- Team-oriented mindset with good communication skills and the ability to collaborate effectively with chefs, kitchen staff, and service teams.
- Ability to follow standardized recipes while also contributing creative ideas for specials and menu enhancements that fit the brand’s identity.
- Basic inventory and mise en place management skills, including planning prep, minimizing waste, and supporting cost-effective operations.
