About Alexander Heritage 1907: Alexander Heritage 1907 is Matheran’s premier ultra-luxury "Heritage Estate & Private Sanctuary." Operating in a strict no-car zone, we cater exclusively to High-Net-Worth Individuals (HNIs/UHNIs) seeking absolute privacy, a premium digital detox, and "Old Money" heritage charm.
Our culinary strategy, "Forest Gastronomy," is anchored by The Glass House Conservatory—a Victorian-inspired glass restaurant where guests dine surrounded by the mist-covered rainforest. We have entirely replaced traditional buffets with the 1907 Signature Trail, a highly curated 5-course heritage tasting menu.
The Role: We are seeking meticulous, observant, and highly disciplined Gastronomy Stewards. You will not be taking rapid-fire orders in a loud dining room. Instead, you will execute the precise, silent physical mechanics of ultra-luxury table service. Working under the command of the Restaurant Captain, you will deliver a multi-sensory, synchronized dining experience that matches the serene, distraction-free environment of our Estate.
Key Responsibilities:
Precision Service Mechanics & The 1907 Signature Trail
- Execute flawless "silent service" (e.g., synchronized plate drops, proactive water and beverage replenishment, precise crumb-scraping, and elegant table clearing) without interrupting guest conversations.
- Support the Restaurant Captain in the delivery of the 5-course 1907 Signature Trail, ensuring the transition between courses is completely frictionless.
- Master the art of proper tray handling, silver service, and fine-dining posture.
Culinary Knowledge & Asset Protection
- Memorize the exact ingredients, sourcing, and allergy profiles of every dish on the tasting menu and our Artisanal Tea selection, acting as a knowledgeable backup to the Captain.
- Handle high-end, fragile assets with absolute care, including crystal glassware, fine china, and bespoke table centerpieces, minimizing breakage to protect operating margins.
Atmosphere Maintenance & Protocol
- Maintain the pristine visual standard of the Glass House Conservatory. Ensure exact symmetry in table setups, perfectly ironed linens, and gleaming cutlery prior to every service block.
- Seamlessly adapt to the Estate’s logistical realities, ensuring high-end service standards are maintained even during heavy monsoon weather.
- Uphold the property's strict privacy and digital detox policies, maintaining a discreet distance while remaining hyper-attentive to guest body language.
Qualifications & Experience:
- 1 to 3+ years of experience as a steward, commis waiter, or F&B associate in a luxury fine-dining restaurant, premium standalone heritage estate, or 5-star hotel.
- Experience moving away from high-volume buffets toward highly curated, à la carte, or tasting menu service is strongly preferred.
- Flawless personal grooming, exceptional posture, and a calm, composed demeanor.
- Good spoken English; ability to communicate clearly and professionally with HNI/UHNI guests when required.
- High physical stamina and adaptability to thrive in Matheran's unique logistical, no-car-zone environment.
