The Role We're looking for an experienced Senior Chef with deep, hands-on expertise in Middle Eastern cuisine to join Persian Kebab Co. as either a full-time team member or a consulting chef on a project basis. You know this food intimately, the spice profiles, the techniques, the regional variations, and you can bring that authenticity into a professional kitchen while leading a team and scaling quality.
What You'll Do
Menu & Recipe Development
- Lead the development and refinement of PKC's Middle Eastern menu with a focus on authenticity and quality
- Standardise recipes, portion sizes, and plating guides across the kitchen
- Introduce seasonal specials and limited-time offerings rooted in Middle Eastern culinary tradition
- Ensure every dish on the menu is a true, flavour-forward representation of the cuisine
Kitchen Leadership
- Oversee kitchen operations and maintain consistent food quality across every service
- Train and mentor junior chefs specifically on Middle Eastern cooking techniques, spice usage, and preparation methods
- Set and enforce standards for food presentation, hygiene, and safety
- Collaborate with the Store Manager on kitchen efficiency, cost control, and wastage reduction
Sourcing & Authenticity
- Identify and recommend authentic Middle Eastern ingredients, spices, and produce
- Work with procurement on vendor relationships to ensure ingredient quality and consistency
- Be the in-house authority on what makes Middle Eastern food taste the way it should
For Consulting Engagements:
- Menu audits and redesign with a Middle Eastern lens
- Staff training on techniques, flavours, and regional specifics
- Recipe documentation and SOP creation
- Periodic kitchen visits and quality assessments
What We're Looking For
- 3–5 years of professional kitchen experience with a dedicated focus on Middle Eastern cuisine (this is non-negotiable)
- Formal culinary training or certification from a recognised institution
- In-depth knowledge of Middle Eastern ingredients, spice profiles, regional dishes, and cooking methods
- Proven ability to develop menus, write standardised recipes, and train kitchen teams
- Strong leadership and communication skills
- High standards for food quality, consistency, and presentation
- Comfortable in a fast-paced, high-volume QSR or restaurant environment
- Open to either a full-time position or a structured consulting arrangement
Bonus Points If You
- Have worked in Middle Eastern restaurants, hotel kitchens, or catering operations in the region
- Have experience launching or overhauling a restaurant menu from scratch
- Have previously worked in a consulting or advisory capacity for F&B brands
- Have lived, trained, or worked in the Middle East
