Position Summary

The Assistant Executive Steward for the Banquet Kitchen plays a critical leadership role in maintaining the highest standards of cleanliness, organization, and operational efficiency across all banquet culinary and stewarding areas. This position supports large-scale banquet and catering operations by ensuring proper sanitation, equipment readiness, and team leadership in a fast-paced, high-volume resort environment.

This leader works closely with the Executive Steward, Banquet Chef, and Food & Beverage leadership team to deliver exceptional guest experiences behind the scenes.


Key Responsibilities

  • Assist in overseeing all stewarding operations for banquet kitchens, including dishwashing, pot washing, and sanitation
  • Ensure compliance with all health, safety, and sanitation standards (local, state, and company guidelines)
  • Lead, train, and schedule stewarding team members to support banquet functions and events
  • Maintain proper inventory and organization of banquet equipment, china, glassware, and silverware
  • Coordinate with culinary and banquet teams to ensure timely setup and breakdown of events
  • Monitor chemical usage, cleaning procedures, and safety protocols
  • Support waste management, recycling programs, and sustainability initiatives
  • Conduct routine inspections of banquet kitchens, storage areas, and back-of-house spaces
  • Assist in managing labor costs while maintaining service excellence
  • Step in to support operations during high-volume events, weekends, and holidays

Qualifications

  • 2–4 years of stewarding or kitchen operations experience, preferably in a resort, hotel, or high-volume banquet environment
  • Previous supervisory or leadership experience required
  • Strong knowledge of sanitation standards and food safety practices
  • Ability to lead teams in a fast-paced, high-pressure environment
  • Excellent organizational and communication skills
  • Flexible schedule, including nights, weekends, and holidays

Physical Requirements

  • Ability to stand and walk for extended periods (up to 8–10 hours per shift)
  • Frequently lift, carry, push, and pull items weighing up to 50 lbs; occasional lifting up to 75 lbs with assistance
  • Ability to bend, stoop, kneel, crouch, and reach overhead repeatedly throughout the shift
  • Comfortable working in hot, humid, and wet environments (kitchens, dish areas, outdoor banquet spaces)
  • Ability to safely operate and work around industrial kitchen equipment and cleaning chemicals
  • Manual dexterity to handle kitchen tools, dishware, and cleaning equipment
  • Ability to work in a fast-paced environment with frequent interruptions and changing priorities
  • Tolerance for high noise levels typical of kitchen and banquet operations
  • Ability to work on slippery or uneven surfaces and maintain balance
  • Must be able to respond quickly to operational needs across large property areas
