Job Summary
The R&D Assistant Chef supports the development, standardization, testing, and implementation of new food products and recipes. The role involves assisting in product trials, recipe documentation, sensory evaluation, sample preparation and coordination to ensure successful product launches and continuous improvement.
Key Responsibilities
• Assist the Executive Chef in developing new recipes, menus and food concepts.
• Prepare kitchen trials and product samples, tasting sessions and sensory evaluation as per project requirements.
• Optimize recipes for cost efficiency and profitability.
• Monitor food trends and incorporate innovation into product development.
• Support in improving existing recipes for taste, cost, shelf life, and operational efficiency.
• Conduct benchmarking of competitor products and market trends.
• Coordinate and participate in factory trials and pilot production runs.
• Monitor product quality during trials and provide feedback for improvements.
Required Skills
• Strong culinary and tasting skills. Knowledge of International cuisines and ingredients. Bakery knowledge is an added advantage.
• Basic understanding of recipe costing and yield calculations.
• Good documentation and communication skills.
• Ability to work in a fast-paced production environment.
• Team coordination and multitasking abilities.
Required Qualification
• Diploma/Degree in Culinary Arts, Food Production, Hotel Management, or related field.
• 4-5 years of experience in R&D, central kitchen, QSR, or food manufacturing industry.
• Basic understanding of food processing and recipe development.
• Knowledge of food safety and hygiene standardsn.
