Role Definition
Responsible for ensuring food safety, regulatory compliance, and systematic quality assurance across the RTE plant, including gravies, curries, simmer sauces, and retort pouch operations.

Key Responsibilities
- Develop, implement, and monitor SOPs for raw materials, production, retort, packaging, and storage.
- Ensure compliance with FSSAI, HACCP, ISO 22000, USFDA, BRC, and export norms.
- Lead internal audits, supplier audits, and prepare for external inspections.
- Handle customer complaints, initiate Root Cause Analysis and CAPA.
- Train production, packaging, and warehouse staff on GMP and food safety.
- Oversee traceability and recall management systems.
Tasks & Activities
A. Food Safety Program Implementation
- Develop and maintain HACCP, GMP, and other food safety programs tailored for ready-to-eat products.
- Oversee the implementation of food safety management systems aligning with FSSAI, ISO, and international standards.
- Conduct risk assessments and develop control measures for critical points in production.
- Program Management: Oversee and maintain prerequisite programs (PRPs) such as Pest Control, Allergen Management, Glass Policy, and Calibration programs. This includes scheduling activities and reviewing vendor reports.
B. Documentation Control & Record Management
- Document Custodian: Act as the custodian for all controlled documents within the FSMS, including manuals, policies, Standard Operating Procedures (SOPs), and forms.
- Version Control: Ensure that only the latest, approved versions of documents are available and in use across the plant. Manage the distribution and retrieval of documents.
- BMR Review: Conduct a thorough review of completed Batch Manufacturing Records (BMRs) and Batch Packaging Records (BPRs) for completeness, accuracy, and compliance with all critical parameters before final product release.
C. Supplier Quality Assurance
- Supplier Evaluation: Assist in the evaluation and approval process for new suppliers of raw materials and packaging.
- Performance Monitoring: Track and trend the performance of existing suppliers based on incoming material rejections, complaints, and timeliness.
- Specification Management: Maintain and update the raw material and packaging material specification documents.
- Supplier Communication: Communicate any material non-conformances to suppliers and follow up on the corrective actions they provide
D. Internal & External Audits
- Internal Audits: Plan and conduct internal audits of various departments (e.g., Production, Stores, Maintenance) against the FSMS standards to identify gaps and areas for improvement. Prepare and circulate audit reports.
- Audit Preparation: Act as a key coordinator in preparing the plant for all external audits, including certification audits (e.g., FSSC 22000), regulatory audits (FSSAI), and customer audits. Support and participate in internal/external audits (FSSAI, ISO, HACCP, third-party certifications like SQF or BRC).
- Audit Support: During external audits, assist by providing requested documents, records, and explanations to the auditor. Follow up on corrective and preventive actions related to audit findings, deviations, or customer complaints.
E. Training & Competency Development
- Training Needs Analysis: Assist in identifying food safety and quality training needs for employees across different departments.
- Content Development: Prepare training materials, presentations, and one-point lessons on key topics like GMP, HACCP, Allergen Control, and Personal Hygiene.
- Conducting Training: Deliver induction training for new employees and conduct annual refresher training sessions for all staff. Track training effectiveness.
- Promote a culture of quality and food safety through continuous education and team engagement
F. Non-conformance, CAPA, & Continuous Improvement
- Investigation Leadership: Lead or participate in the Root Cause Analysis (RCA) for any process deviations, customer complaints, or internal non-conformances.
- CAPA Management: Manage the plant's Corrective and Preventive Action (CAPA) system. This includes logging all issues, tracking the implementation of actions, and verifying their effectiveness.
- Data Analysis: Collect and analyse quality data (e.g., complaint trends, in-process deviations) to identify opportunities for systemic improvement
Break Up of Daily, Weekly and Monthly Tasks
Raw Material
-Inspect every incoming RM & PM.
- Verify CoA from supplier.
- Test critical parameters (e.g., moisture, colour, aroma for spices; viscosity for pastes).
- Approve or reject incoming consignments.
Production Monitoring
- Verify batch production sheets for each gravy/curry. - Ensure proper monitoring of critical control points (CCPs) — retort temp, F0 value, sealing pressure. - Approve deviations & take corrective actions. - Ensure allergen segregation and cleaning validation.
In-process QC
-Measure pH, salt %, viscosity, TSS for gravies.
- Record temperature-time profiles for retort batches.
- Check homogenization and consistency for sauces.
- Perform sensory evaluations.
Packaging Control
- Check retort pouch sealing integrity. - Verify pouch coding (MFD, EXP, Batch No.). - Monitor secondary carton barcoding & export label compliance.
- Inspect retort pouches for bursting, sealing quality, pinholes.
- Verify printing alignment, batch coding, and export label accuracy.
- Check carton integrity and stacking pattern.
Finished Goods QC
- Conduct retention sample inspection.
- Approve dispatch based on QC results.
- Verify export container cleanliness and load hygiene.
Plant Hygiene
- Inspect cleaning & sanitation logs. - Conduct daily hygiene checks on staff (uniform, gloves, caps, handwashing). - Ensure pest control records are updated.
Documentation
- Approve QC reports for RM, WIP, and FG. - Review daily production quality logbooks. - Sign off on any material rejection or deviation.
Weekly Tasks
- Conduct internal audits of production, packaging & storage.
- Update HACCP plan records & monitoring charts.
- Train supervisors and line operators on GMP & personal hygiene.
- Review vendor performance & ensure updated Certificates of Analysis (CoA).
- Verify nutritional label compliance for domestic & export packs.
- Review QC trends for RM, WIP, and FG.
- Inspect packaging inventory for shelf-life compliance.
- Conduct sampling audits of FG pouches for leak & burst strength.
- Hold cross-functional meetings with QA & production on QC issues.
Monthly Tasks
- Lead mock recall drills to test traceability systems.
- Summarize quality deviations, complaints, and CAPA.
- Update & issue revised SOPs wherever needed.
- Prepare monthly Quality Review Reports for management.
- Lead management review meetings for continuous improvement.
- Summarize QC rejection trends and share improvement plans.
- Approve long-term retention samples for shelf-life studies.
- Validate new packaging material suppliers.
- Participate in mock recalls and food safety drills.
