Job Summary
We are seeking an experienced Purchase & Inventory Manager to oversee procurement and inventory operations across multiple outlets at the corporate level. The ideal candidate will have strong vendor management skills, expertise in price negotiations, quality control knowledge, vendor handling, inventory supervision and experience in hotel or restaurant environments.
Key Responsibilities
1. Vendor Selection & Management
• Identify, evaluate, and onboard reliable vendors and suppliers.
• Develop and maintain strong vendor relationships.
• Conduct periodic vendor performance reviews.
• Ensure compliance with company standards and food safety regulations.
2. Price Negotiation & Cost Control
• Negotiate pricing, contracts, and payment terms to achieve cost efficiency.
• Monitor market price trends and identify cost-saving opportunities.
• Ensure procurement aligns with approved budgets.
• Work closely with finance to control food cost variance.
3. Quality Assurance
• Ensure all purchased goods meet defined quality standards.
• Coordinate quality checks for perishable and non-perishable items.
• Address and resolve supplier quality issues promptly.
• Maintain consistency in product specifications across outlets.
4. Inventory Management
• Oversee inventory control across multiple outlets.
• Monitor stock levels to prevent shortages or overstocking.
• Conduct and review periodic stock audits.
5. Multi-Outlet Coordination
• Standardize procurement processes across all outlets.
• Coordinate with outlet managers and chefs for forecast planning.
• Ensure timely delivery of materials to all locations.
• Support new outlet openings with procurement planning.
6. Reporting & Compliance
• Prepare monthly procurement and inventory reports.
• Track KPIs such as food cost %, wastage %, and stock variance.
• Ensure compliance with food safety, hygiene, and regulatory standards.
• Check and approve vendor deliveries and invoices.
• Coordinate with the accounts/payment team for invoice approvals and resolve any discrepancies or required changes.
Qualifications & Experience
• Bachelor’s degree in Supply Chain, Hospitality Management, Commerce, or related field.
• 5–8+ years of experience in procurement and inventory within F&B industry.
• Experience at corporate level managing multiple outlets (hotel or restaurant background mandatory).
• Experience with Japanese cuisine restaurants will be an added advantage.
• Strong negotiation and analytical skills.
• Proficiency in inventory management systems / ERP.
• Good understanding of food safety and quality standards.
