Job Title: Operations Manager – Cloud Kitchen

The Mission
As the custodian of "Odisha Village Stories," you will translate our Chef’s vision into a profitable, high-performing operation. You are responsible for the P&L, culinary consistency, and maintaining a high-performance kitchen culture.
Core Responsibilities
1. Operational P&L & Cost Control
Financial Discipline: Maintain Food Cost at 32% and minimize wastage to <3%. Monitor dish-wise margins and identify areas for cost opti
mization.Supply Chain Management: Manage vendor relationships and procurement schedules to ensure 100% menu availability while maintaining optimal par levels.
Pilferage Control: Implement strict inventory audits to prevent stock leakage or unauthorized consumption.
2. Culinary Quality & Training (Trained by Consultant)
Consistency Guardian: Conduct daily pre-service tasting checks. Ensure flavor, portioning, and presentation strictly follow the bran
d's SOPs.Staff Upskilling: Lead the training of kitchen staff on specialized Odia cuisine techniques and brand values.
3. Platform & Dispatch Management
Throughput Optimization: Architect kitchen workflows to maintain an average "Ready-to-Handover" time of <12
minutes.Storefront Management: Own the Swiggy/Zomato/Direct dashboards. Optimize menu performance and handle customer escalations/Experience Recovery.
Packaging Integrity: Ensure zero-leakage standards for thalis and curries through rigorous final-check audits.
4. Leadership & Compliance
Team Management: Direct hiring, roster management, and conflict resolution for the kitchen and packi
ng teams.Statutory Compliance: Ensure 100% adherence to FSSAI standards, fire safety, and hygiene protocols.
5. Reporting & Strategy
MIS Ownership: Deliver daily EOD reports on sales, wastage, and inventory
variance.Strategic Input: Provide data-backed insights on top-selling vs. slow-moving items to the Founders.
Required Candidate Profile
Expertise: Deep knowledge of Petpooja/Limetray and Aggregator
backends.Analytical Skills: Strong command over Excel for cost-tracking and sales analysis.
Character: High integrity for cash/stock handling and a "Founder's Mindset."
