Job Summary:The North Indian Head Chef oversees all kitchen operations, specializing in traditional and modern North Indian cuisine. This role involves menu planning, food preparation, staff management, and ensuring high standards of food quality, hygiene, and presentation.
Key Responsibilities:1. Food Preparation & Menu Planning- Design and update menus featuring North Indian dishes (e.g., butter chicken, biryani, kebabs, naan, paneer dishes)
- Ensure authenticity in taste, texture, and presentation
- Innovate new recipes while maintaining traditional flavors
2. Kitchen Management- Supervise daily kitchen operations
- Allocate duties to kitchen staff (sous chefs, cooks, helpers)
- Maintain smooth workflow during service hours
3. Quality Control- Ensure consistency in taste and portion sizes
- Monitor food presentation and plating standards
- Conduct regular tastings and quality checks
4. Inventory & Cost Control- Manage stock levels of spices, meats, vegetables, and dairy
- Order supplies and maintain vendor relationships
- Minimize food wastage and control costs
5. Hygiene & Safety- Ensure compliance with food safety standards (FSSAI guidelines in India)
- Maintain cleanliness and sanitation in the kitchen
- Train staff on hygiene practices
6. Staff Training & Leadership- Train kitchen staff in North Indian cooking techniques (tandoor, gravies, spice blending)
- Mentor junior chefs and improve team performance
- Handle scheduling and performance management
Required Skills & Qualifications:- Proven experience as a Head Chef or Senior Chef in North Indian cuisine
- Strong knowledge of tandoor cooking, curries, and regional dishes
- Leadership and team management skills
- Knowledge of food safety and kitchen operations
- Creativity in menu development
- Ability to work under pressure in a fast-paced environment
Preferred Qualifications:- Diploma or degree in Hotel Management / Culinary Arts
- Experience in fine dining or high-volume restaurants
- Familiarity with regional North Indian cuisines (Punjabi, Mughlai, Awadhi)
Working Conditions:- Long and flexible working hours (including weekends/holidays)
- High-pressure kitchen environment
- Standing for extended periods
