Role Description
This is a full-time, on-site role for a Research and Development (R&D) Specialist at Aditi Foods, located in Sangli, Maharashtra. The R&D Specialist will be responsible for conducting research and developing new food products to meet market demands and customer preferences. Day-to-day tasks include formulating recipes, analyzing product quality, improving existing processes, and collaborating with various teams to ensure product innovation aligns with industry standards and customer needs. The role may also involve maintaining laboratory protocols, conducting quality assurance testing, and adhering to international food safety standards.
Core Work Scope in Food R&D1. Product Development
- Develop new food products (syrup,crush,pickles, beverages, dairy, ready-to-eat meals, etc.)
- Reformulate existing products to improve taste, texture, nutrition, or shelf life
- Work with ingredients like preservatives, stabilizers, and flavor systems using principles of Food Chemistry
2. Recipe Formulation & Optimization
- Create and standardize recipes for large-scale production
- Adjust formulations based on cost, availability, and target market
- Ensure consistency in flavor, texture, and appearance
3. Testing & Sensory Evaluation
- Conduct lab and kitchen trials
- Organize taste panels to evaluate flavor, aroma, and mouthfeel
- Apply techniques from Sensory Science
4. Shelf-Life & Stability Studies
- Determine how long a product stays safe and appealing
- Test under different storage conditions (temperature, humidity)
- Study microbial growth and spoilage using Food Microbiology
5. Food Safety & Regulatory Compliance
- Ensure compliance with standards like Food Safety and Standards Authority of India (in India)
- Implement food safety systems such as HACCP
- Verify labeling accuracy (nutrition facts, allergens, claims)
6. Process Development & Scale-Up
- Transition products from lab scale to factory production
- Optimize processing methods (baking, freezing, extrusion, packaging)
- Work closely with production teams to ensure feasibility
7. Ingredient Research & Innovation
- Explore new ingredients (plant-based proteins, natural preservatives, functional foods)
- Track global food trends (e.g., clean label, vegan, fortified foods)
- Collaborate with suppliers for new raw materials
8. Cost Optimization
- Balance quality with cost targets
- Identify alternative ingredients or processes to reduce expenses
- Support procurement and supply chain decisions
9. Documentation & Reporting
- Maintain product specifications and SOPs
- Prepare technical reports and product dossiers
- Support audits and quality certifications
