Odisha Village Stories is not just a kitchen; it’s a culinary archive. We are dedicated to bringing the minimalist, ritualistic, and hyper-regional flavors of Odisha’s villages to the modern table.
The Mission
We are looking for Commis 1 professionals who are ready to be the backbone of our kitchen. You will support our Head Chef/ Executive Chef in executing a menu that is technically demanding and culturally significant. You aren't just cooking; you are maintaining a legacy while hitting strict commercial benchmarks.
Key Responsibilities
- Heritage MEP: Execute daily Mise En Place for Odia specialties—besara pastes, lentil preparations, and artisanal tempering.
- Operational Discipline: Maintain COGS targets (28–32%) through meticulous portion control and yield management.
- Technique Mastery: Assist in traditional "slow-food" methods.
- SOP Adherence: Follow standardized recipe cards to ensure 100% flavor consistency across every shift.
- Kitchen Hygiene: Uphold gold-standard FSSAI compliance and station cleanliness.
What We Are Looking For
- A minimum of 2 years in a professional, high-volume kitchen.
- A deep-seated respect for Indian regional micro-cuisines (Odia experience is a massive plus, but a "student mindset" is mandatory).
- The ability to work under pressure without compromising on the culinary sensibility of the food.
