Role Description The Hot Kitchen Head Chef is responsible for overseeing all hot kitchen operations, ensuring consistent quality, taste, and presentation across the menu. This full-time, on-site role in Coimbatore includes planning and executing daily service, managing food preparation, supervising cooking stations, and maintaining high standards of hygiene and safety. The Head Chef will lead, train, and schedule kitchen team members, coordinate with management on menu planning, and support the development of new dishes that align with Anko’s philosophy of soulful, everyday food. The role also involves inventory control, vendor coordination, cost management, and adherence to portioning and wastage norms.
Qualifications
- Strong culinary expertise in hot kitchen operations, including grill, sauté, and main-course preparation, with a focus on consistency and flavor.
- Proficiency in menu planning, portion control, and food cost management, including inventory tracking and wastage reduction.
- Proven leadership and team management skills, including training, scheduling, and performance supervision in a fast-paced kitchen environment.
- Thorough knowledge of food safety, hygiene standards, and compliance with local health regulations.
- Excellent time management and organizational skills, with the ability to coordinate multiple orders during peak service.
- Strong communication and collaboration skills to work closely with front-of-house and management teams.
- Creativity and passion for developing and refining dishes that reflect café-style, comfort-driven cuisine.
- Prior experience as a Head Chef or Senior Chef de Partie in a café, casual dining, or similar setup is preferred.
- Culinary diploma or equivalent professional training is an advantage.
- Willingness to work flexible hours, including weekends and holidays, as per operational needs.
