- Food Cost Margin Control (Core Role)
Monitor daily, weekly, and monthly food cost % per outlet
Track theoretical vs actual food cost using recipes POS data
Control portioning, yields, batch sizes, and prep losses
Identify pilferage, over-portioning, wastage, and expiry losses
Validate menu pricing vs contribution margins
Support menu engineering for profitability.
Oversee daily stock consumption and weekly stock counts
Ensure strict FIFO, shelf-life, and expiry adherence
Reconcile GRN vs invoice vs POS consumption
Control high-value SKUs (cheese, sauces, meats, oils)
Track non-food items (packaging, cutlery, disposables)
Conduct surprise outlet audits and variance reporting.
- POS, Aggregator Sales Reconciliation
Reconcile POS sales vs Zomato / Swiggy / other aggregators
Track commissions, cancellations, refunds, discounts, promos
Validate coupon, loyalty, and campaign cost impact
Ensure daily cash, card, UPI, and wallet reconciliations
Monitor store-level revenue leakages.
- Vendor, Purchase Payables Control
Review vendor pricing, yield losses, and credit terms
Validate purchase orders, GRNs, and invoices
Monitor rate deviations and unauthorized purchases
Ensure timely vendor payments without overpayments
Support vendor negotiations with cost intelligence.
- Accounting Books of Accounts
Ensure accurate booking of purchases, sales, and inventory
Maintain inventory accounting month-end stock valuation
Support monthly PL preparation outlet-wise
Track COGS, manpower cost, utilities, and overheads
Coordinate with statutory auditors and internal auditors.
Ensure compliance with GST, FSSAI, labour norms (finance side)
Validate GST input credits on food packaging
Maintain audit-ready documentation and SOP adherence
Flag control weaknesses and recommend corrective actions.
Prepare daily sales food cost dashboards
