Role Description
This is a full-time on-site role for a Head Chocolatier at Mabon Chocolates, located in Gurgaon. The Head Chef will oversee the production of artisanal chocolates and pastry, curate new recipes, and ensure high standards of taste and quality. Responsibilities include sourcing top-quality ingredients, leading and training the kitchen team, managing kitchen operations, and maintaining consistency in all chocolate creations. Additionally, the role will involve new product ideation and contributing to the overall success of the brand.
Qualifications
Bean-to-Bar Chocolate Production
- Lead end-to-end bean-to-bar chocolate production, from roasting and refining to tempering and finished products.
- Manage chocolate production across bars, bonbons, dragées, barks, spreads, and seasonal collections.
- Ensure consistency in flavour, texture, temper, appearance, and quality across all products.
- Develop and maintain SOPs for chocolate production and quality control.
- Monitor production efficiency while maintaining premium craftsmanship.
Chocolate Innovation & Product Development
- Create new chocolate products, bonbon collections, inclusions, fillings, spreads, and seasonal offerings.
- Experiment with flavour pairings, origins, fermentation profiles, and innovative ingredients.
- Lead R&D for retail, gifting, café, and limited-edition collections.
- Stay updated on global chocolate trends and premium confectionery techniques.
Pastry & Dessert Operations
- Oversee production of pastries, desserts, brownies, cookies, viennoiseries, and café offerings.
- Develop chocolate-forward desserts that align with the Mabon brand.
- Ensure consistency in taste, presentation, and portioning.
- Support menu development and seasonal café specials.
Kitchen Leadership & Operations
- Lead and manage the chocolate and pastry production teams.
- Plan daily production schedules for retail, café, corporate gifting, and online orders.
- Ensure smooth workflow across all production activities.
- Maintain hygiene, sanitation, and FSSAI compliance.
- Conduct routine quality checks on raw materials, chocolate production, finished products, and equipment.
- Maintain strict quality standards across every batch.
- Ensure adherence to SOPs and premium presentation standards.
Team Training & Development
- Train and mentor chocolatiers and pastry chefs.
- Build a culture of precision, creativity, and continuous learning.
- Standardize techniques and improve operational efficiency.
Inventory & Cost Management
- Monitor inventory of cocoa beans, couverture, ingredients, and packaging materials.
- Coordinate procurement and production planning.
- Manage recipe costing, yield optimization, and wastage control.
Required Qualifications
- 3–7 years of professional experience in chocolate production, with bean-to-bar chocolate experience preferred.
- Strong expertise in tempering, molding, enrobing, ganache production, fillings, and premium confectionery.
- Experience developing chocolate products for retail or hospitality.
- Experience in pastry, desserts, or bakery production is preferred.
- Strong understanding of chocolate science, crystallization, shelf life, and quality control.
- Experience leading production teams in a fast-paced environment.
- Excellent organizational, leadership, and communication skills.
- Working knowledge of food safety and FSSAI standards.
