Role Overview
The Head Chef at Olive Cafe Bar, Ludhiana, will ensure the highest quality of food preparation and execution while maintaining kitchen operations in alignment with the restaurants vision. The role requires strong culinary expertise, leadership skills, and the ability to elevate Mediterranean-inspired cuisine while ensuring consistency, efficiency, and innovation.
Key Responsibilities
- Culinary Execution Quality Control
- Ensure the preparation and presentation of all dishes meet Olive's high standards.
- Maintain consistency in taste, portion size and plating across all menu items.
- Implement and uphold recipes, cooking techniques and kitchen standards.
- Work closely with the Culinary Director - Olive Cafe Bar to refine and develop signature dishes.
- Innovate and contribute to menu changes, seasonal specials and new trends.
- Kitchen Operations Efficiency
- Oversee daily kitchen operations, ensuring smooth and efficient workflows.
- Monitor food production to avoid wastage and ensure timely service.
- Organise and delegate tasks effectively among kitchen staff.
- Ensure adherence to prep schedules and mise en place for seamless service.
- Conduct daily pre-service briefings with the culinary team.
- Team Leadership Training
- Leads from the front and mentors junior chefs, line cooks and kitchen staff.
- Conduct regular training sessions to improve technical skills and product knowledge.
- Hands on Chef
- Foster a culture of teamwork, accountability and excellence in the kitchen.
- Assist in recruiting and onboarding new kitchen personnel.
- Hygiene, Safety Compliance
- Ensure the kitchen maintains the highest levels of hygiene and sanitation.
- Adhere to FSSAI guidelines and ensure compliance with all food safety regulations.
- Implement and maintain HACCP standards.
- Conduct regular inspections of kitchen equipment, storage areas, and food preparation processes.
- Inventory Cost Management
- Monitor food costs and work on cost-effective menu engineering.
- Assist in sourcing and selecting high-quality ingredients from reliable suppliers.
- Maintain optimal inventory levels to avoid overstocking or shortages.
- Work with the purchase department to ensure proper stock rotation and minimal waste.
- Collaboration Guest Experience
- Work closely with FOH teams to ensure smooth coordination between kitchen and service.
- Participate in menu tastings, guest interactions and special events.
- Handle customer feedback related to food quality and make necessary improvements.
- Special Initiatives Events
- Support the execution of wine pairing events, live grill sessions and interactive food experiences.
- Experiment with new-age European comfort food trends while preserving Olive Beachs classic essence.
Key Skills Qualifications
- Experience: Minimum 8+ years in a fine-dining or premium restaurant setting, with at least 3 years as a Sous Chef.
- Cuisine Expertise: Strong grasp of Mediterranean, European and contemporary gourmet cuisine.
- Leadership: Ability to manage, train and inspire a team.
- Creativity: Passion for developing new dishes and pushing culinary boundaries.
- Organisation Multitasking: Strong ability to handle multiple orders and sections during peak hours.
- Attention to Detail: A perfectionist mindset to maintain food consistency and presentation.
- Tech-Savvy: Familiarity with inventory management systems and digital order processing tools
