About the Company
Odd Culture is an upcoming hospitality concept in Gurugram, blending a vibrant all-day speciality café, a micro-bakery, and a high-energy evening bar.
About the Role
We are not looking for a status-quo manager. We need a startup-minded culinary operator who thrives in dynamic launch environments, commands kitchen logistics, and treats the business like their own.
Responsibilities
- Daily Kitchen Operations: Lead daily production across diverse service formats—handling a busy daytime brunch service and pivoting seamlessly into a high-volume, refined evening plates program.
- Menu Execution & Quality Control: Maintain absolute consistency of high-profile menu standouts, ensuring meticulous execution of technical elements like:
- The Bakery Program: Working closely with the bakery team
- The Savory Execution: Overseeing precision-driven dishes
- Inventory & Financial Ownership: Manage kitchen food costs, waste mitigation, vendor sourcing in the local market, and high-standard hygiene audits.
- Team Leadership: Build a culture of continuous learning, cross-training line cooks to maintain perfect execution on both the pastry/bakery and hot-line stations.
Qualifications
- Minimum 6–8+ years of professional kitchen experience, with at least 2+ years acting as a Head Chef or Executive Chef. Preferably in upmarket cafés/restaurants.
- Demonstrated experience in standalone startup restaurants, premium boutique cafés, or high-end fusion concepts.
- Must be available to join on short notice.
- Strong communication skills with an innate ability to teach, document recipes, and maintain strict consistency.
Required Skills
- Startup Grit & Ownership: You have proven experience setting up, launching, or scaling new culinary concepts or startups. You take absolute ownership of the kitchen—from vendor alignment and cost controls to line consistency and troubleshooting under pressure.
- The “Learn & Train” Philosophy: Our culinary program is highly technical (incorporating elements like dashi-infused components, custom ferments, and complex bakery logistics). You must possess a sharp willingness to learn our distinct flavour philosophies and have a genuine passion for mentoring and training a disciplined team.
- Technical Mastery: Deep familiarity with or a strong desire to master sourdough baking, advanced egg techniques (soft-folded eggs, crispy nests, precision poaching), and high-level sauce execution (e.g., house-made fermented sauces, lacto hot honey, miso-cashew creams, and fat-washed or clarified profiles).
Preferred Skills
- Experience with fermentation techniques and all-day menus with small and large plates.
- Ability to innovate and create new menu items that align with our culinary philosophy.
