Role Description The General Manager – Operations (Internal) role is a full-time, on-site position based in Hyderabad. This role oversees day-to-day operations across outlets, ensuring consistent delivery of guest experience, adherence to brand standards, and smooth functioning of all departments. Responsibilities include setting and monitoring operational KPIs, managing budgets, optimizing costs, and implementing processes that drive efficiency and profitability. The general manager leads and mentors outlet managers and operational teams, coordinates with central functions such as finance, HR, and marketing, and ensures compliance with regulatory and safety requirements. The role also involves analyzing performance data, addressing customer feedback, supporting new project rollouts (including the large-format brewery), and driving continuous improvement in service, quality, and operational excellence.
Qualifications
- Strong general management and operations management skills to oversee multi-outlet hospitality operations and implement scalable processes.
- Experience with budgeting and financial oversight to manage P&L, control costs, and support sustainable revenue growth.
- Prior leadership experience in hospitality, F&B, or large-format venues (brewery, restaurant chains, entertainment centers).
- Strong analytical, problem-solving, and decision-making abilities, with comfort working with data and operational metrics.
Key Responsibilities
F&B P&L & Financial Management
· Manage internal P&L across all outlets, central kitchens, and corporate units.
· Control prime costs (COGS and labor costs) to maximize gross profit margins.
· Supervise timely receivables from corporate clients, aggregators (e.g., Swiggy, Zomato), and franchise partners.
· Review daily sales reports (DSR) and billing data to eliminate cash/inventory leakages.
⚙️ SOPs & Process Optimization
- Design, implement, and enforce SOPs across all operational departments.
- Audit existing workflows regularly to improve efficiency and eliminate bottlenecks.
- Train department heads on operational compliance and quality benchmarks.
- Mitigate operational risks by ensuring strict adherence to company policies
- Design and enforce strict SOPs for front-of-house (FOH), back-of-house (BOH), and central warehousing.
- Audit food safety compliance, ensuring strict adherence to local regulatory standards (e.g., FSSAI, health department codes).
- Standardize recipe portioning and yield management workflows to minimize food waste.
- Train unit managers on operational compliance, guest hospitality, and cost-control benchmarks.
📊 Data Analysis & Business Intelligence (BI)
- Leverage BI tools to track corporate performance and operational KPIs.
- Analyze complex data sets to provide actionable insights to executive leadership.
- Build data dashboards that reflect real-time operational and financial health.
- Forecast operational trends using historical data to guide strategic decisions.

- Manage administrative teams, facilities, vendors, and procurement contracts.

Job Requirements
Education & Experience
- Degree: MBA or Master’s degree in business administration, operations, or finance.
- Experience: 8–12 years in operations management, with at least 3 years in a GM or equivalent senior role.
