Food & Beverage Manager

Job Summary:
The Food & Beverage Manager at Beach terrace VGP Heritage Injambakkam, is responsible for overseeing the complete operations of the Food & Beverage department, ensuring excellent guest service, smooth daily operations, profitability, staff management, food quality, cost control, and revenue growth. The candidate should possess strong knowledge in food costing, labour budgeting, marketing strategies, banquet operations, restaurant management, and customer relationship management.
Key Responsibilities:
Operational Management
- Manage and supervise the overall Food & Beverage operations including restaurant, banquet, outdoor catering, and room service.
- Ensure smooth daily functioning of all F&B outlets.
- Maintain high standards of hygiene, cleanliness, service quality, and guest satisfaction.
- Coordinate with kitchen, housekeeping, maintenance, and purchase departments for efficient operations.
- Handle guest complaints professionally and ensure prompt resolution.
Food Costing & Cost Control
- Prepare and monitor food costing for all menu items.
- Control food wastage, pilferage, and operational losses.
- Maintain ideal food cost percentage as per company standards.
- Conduct regular inventory checks and stock audits.
- Monitor portion control and recipe standardization.
- Coordinate with purchase department for cost-effective procurement.
Labour Budgeting & Staff Management
- Prepare and manage labour budgeting for all F&B operations.
- Control manpower cost and optimize staff productivity.
- Plan staff duty rosters, shifts, and deployment efficiently.
- Recruit, train, supervise, and motivate F&B staff.
- Conduct regular performance evaluations and disciplinary procedures when required.
- Ensure grooming and discipline standards are maintained.
Sales & Marketing Responsibilities
- Develop marketing plans to increase restaurant and banquet revenue.
- Coordinate promotional activities, food festivals, and special events.
- Build and maintain relationships with corporate clients and regular guests.
- Work towards achieving monthly and yearly sales targets.
- Promote banquet bookings, outdoor catering, and special packages.
- Coordinate with digital marketing and sales teams for business growth.
Financial Responsibilities
- Prepare departmental budgets and revenue forecasts.
- Monitor daily sales reports and profitability.
- Achieve revenue targets while maintaining operational efficiency.
- Analyze financial reports and implement corrective actions where necessary.
Compliance & Safety
- Ensure compliance with food safety regulations and company policies.
- Maintain proper hygiene and sanitation standards in all F&B areas.
- Ensure all licenses and operational compliances are up to date.
Candidate Requirements:
- Minimum 8–12 years of experience in Food & Beverage operations.
- Strong knowledge of food costing, labour budgeting, and marketing.
- Experience in handling restaurants, banquets, and events.
- Excellent leadership and team management skills.
- Good communication and guest handling abilities.
- Ability to work under pressure and achieve targets.
- Knowledge of inventory management and cost control systems.
- Familiarity with POS systems and operational reporting.
