✨ About the Role:
Eatopia is deeply invested in celebrating regional Indian cuisines — especially South Indian traditions — in ways that are respectful, elevated, and relevant to modern diners. This role focuses on preserving authenticity while pushing boundaries in presentation, format, and scalability.
✨ Key Responsibilities:
- Lead R&D for South Indian-focused concepts
- Develop modern interpretations of traditional dishes
- Refine gravies, spice blends, batters & fermentation processes
- Standardise recipes for multi-unit scalability
- Collaborate with pastry/bakery teams for fusion innovation
- Source authentic regional ingredients
- Lead tasting panels and refinement cycles
✨ What We’re Looking For:
- Strong foundation in South Indian cuisines (Tamil, Kerala, Karnataka, Andhra)
- Expertise in dosa, idli, appam, uttapam, podis, chutneys & sambar variations
- Deep understanding of fermentation and batter science
- Ability to modernise plating while preserving authenticity
- Strong palate and spice calibration
- High operational discipline
