Job Summary
We are seeking a dynamic, high-energy Executive Chef with a deep-rooted expertise in South Indian cuisine and a proven track record in high-volume, fast-service kitchen operations.
In this role, you will not just be managing a kitchen; you will be driving the engine of a fast-paced culinary operation. You will ensure consistency, speed, and exceptional quality across hundreds of covers daily, while maintaining strict cost controls, optimizing kitchen workflows, and leading a large, fast-moving culinary team.
Key Responsibilities
- High-Volume Operations Management: Oversee day-to-day kitchen operations, ensuring rapid ticket times, seamless service flow, and maximum efficiency without compromising food quality during peak rush hours.
- Menu Consistency & Quality Control: Maintain exact recipe standards for core South Indian offerings (tiffin items, biryanis, meals, regional curries) to ensure taste profile uniformity across high-volume production.
- Financial & Inventory Control: Manage kitchen budgets, monitor food cost percentages, minimize wastage, and optimize supply chain ordering for perishable high-turnover ingredients.
- Team Leadership & Training: Recruit, train, and supervise junior chefs and kitchen staff on high-speed prep, assembly-line efficiency, safety protocols, and portion control.
- Kitchen Safety & Hygiene: Enforce strict FSSAI compliance, kitchen cleanliness, food labeling, and safety standards across all stations.
- Process Optimization: Continuously look for ways to streamline prep work (mise en place) and cooking processes to shave off critical seconds from ticket fulfillment times.
Qualifications & Skills
- Experience: 5+ years of professional kitchen experience, with at least 3+ years in a leadership role (Executive Chef / Head Chef) explicitly within a high-volume fast-casualrestaurant or large-scale banqueting environment.
- Culinary Expertise: Strong, authentic background in regional South Indian cuisine (Andhra, Telangana traditional cuisines).
- Degree: Degree or Associate’s degree in Culinary Arts, Hotel Management, or equivalent practical experience.
- Speed & Stamina: Proven ability to thrive and maintain focus under the intense pressure of a high-volume, fast-service environment.
- Leadership: Excellent supervisory, communication, and organizational skills to manage a large kitchen crew.
- Business Acumen: Strong understanding of kitchen KPIs, inventory software, food costing, and labor management.
