Maiz Kitchens | Full-time | Based in Mumbai | Non-Remote
We're a fast-casual restaurant chain with 50 outlets across 4 cities, growing 100% year-on-year. Over the next 3 years, we're going from 50 stores to 200. That's not a plan on a deck — it's actively happening, and the only thing standing between us and that number is whether we can build the systems to support it.
That's where you come in.
What this role actually is
You'll work directly with the founder on 0-to-1 projects across the business. Real examples of what's on the table in the next 12 months:
- Designing and rolling out a new daypart strategy across 50+ outlets
- Building the hiring and onboarding system that takes us from hiring 5 store managers a month to 15
- Cracking food wastage from x% to under y% across the chain
- Setting up the playbook for entering 2 new cities
- Launching a new format or channel from scratch
Each project will run 3–6 months. You'll own it end-to-end: diagnose the problem, design the system, run the pilot, coordinate with ops/HR/finance/marketing/tech to roll it out, build the follow-up mechanism to ensure adherence, and then hand it off cleanly. Then you move to the next one.
This is not a strategy role. There are no decks for the sake of decks. The bar is whether the thing you designed is actually running 6 months after you handed it off.
Who we're looking for
Education: Bachelor's from a Tier 1 institution — IITs, BITS Pilani, top NITs, top IIMs (for integrated programs), ISB, SRCC, St. Stephen's, or strong international universities. An MBA is a plus but not required.
Experience: 4–8 years of work experience, with at least 2 years in an operating role at a fast-growing startup (Series B+, consumer/D2C/food/retail preferred). A stint in management consulting, investment banking, or a top product role before that is a strong plus — but the operating experience is non-negotiable. We need someone who has actually shipped things in the messy real world, not just analyzed them.
You'll thrive here if you've:
- Owned and shipped tangible 0-to-1 projects with measurable outcomes (and can talk about them with specific numbers)
- Coordinated across multiple functions without formal authority
- Worked in a chief of staff, founder's office, special projects, or strategy/ops role at a high-growth startup
- Run something complex with real stakes — even a college fest with a real P&L or a side venture counts
- Operating experience in food, retail, FMCG, QSR, or hospitality is a meaningful plus
You probably won't thrive here if:
- Your background is purely consulting/banking with no real operating chops
- You've never had to convince a skeptical regional manager to actually do something
- You need a clear scope, a defined team, and a tidy org chart to do your best work
- You optimize for designation and title more than for what you're actually building
