Role Overview
The Expo (Expeditor) is the communication hub between the kitchen and front-of-house team, ensuring every dish is accurate, complete, and delivered quickly. In a breakfast setting, this role is critical for handling high-volume, fast-turn tables while maintaining food quality and timing.

Core Responsibilities
1. Order Coordination & Timing
• Read and organize tickets from the POS system
• Call out orders clearly to kitchen staff (eggs, sides, modifiers, etc.)
• Ensure all items for a table are ready at the same time
• Manage ticket flow during peak breakfast rush (weekends especially)

2. Food Quality & Accuracy
• Check plates for accuracy (correct sides, modifiers, doneness of eggs, etc.)
• Ensure proper presentation before food leaves the kitchen
• Catch and fix mistakes before dishes go out

3. Communication Hub
• Act as the bridge between servers and kitchen staff
• Communicate special requests, allergies, and modifications clearly
• Provide updates to servers on delays or re-fires

4. Plate Assembly & Garnishing
• Assist in final plating (toast, sides, garnishes, sauces)
• Ensure plates are clean, organized, and visually appealing
• Organize trays for efficient food running

• Prioritize tickets based on timing and table needs
• Keep the line moving smoothly during rush periods
• Work closely with cooks to maintain pacing and avoid bottlenecks

• Keep expo line clean and stocked (butter, jam, syrup, garnishes)
• Maintain organized ticket system
• Follow food safety and sanitation standards
