Room Service Cook - Naval Medical Center Portsmouth - Enjoy a rewarding and challenging position with a nonprofit organization that has been helping educate, train, and provide employment opportunities for individuals with disabilities since 1955. We are currently seeking applicants for a Room Service Cook who will be responsible for meal production and service. Works closely with the nutrition team and other food service staff to provide high-quality, patient-centered meal service. Applicant must have the ability to work Sunday through Saturday, rotating from 04:30 am - 1:00 pm / 10:30 am - 6:00 pm.
ESSENTIAL DUTIES/RESPONSIBILITIES:
The following duties and responsibilities represent the essential functions of this job that an individual must be able to perform with or without a reasonable accommodation:
• Prepares, cooks, and serves food items (modified and regular) in individual servings to support inpatient food service, ensuring that all food items are prepared professionally and served attractively, including an appropriate garnish
• Prepares high-quality foods to order professionally and immediately responds to inpatient food service orders as they are received; prepares and plates items attractively within ten minutes of receiving the order
• Coordinates with cooking performed at different work centers; tests and evaluates new food products and recipes
• Recommends modifications to standard recipes; works from computerized recipes, reports, and meal tickets
• Exercises practical knowledge of basic nutrition and interprets recipes to accomplish assigned tasks; weighs and measures individual servings required by special diets (i.e., Diabetic, renal, etc.)
• Compiles orders for required ingredients and food items; checks to ensure the quality and quantity are satisfactory to meet requirements, and stores portioned foods and backup items in inaccessible areas at proper temperatures for future use by established policies
• Operates by safety regulations equipment such as mixers, grinders, steam kettles, electric urns, and other powered and mechanical kitchen equipment. Instructs and oversees others in the proper use and care of various pieces of kitchen equipment
• Properly uses all utensils and equipment required in the full range of cooking, which includes knowing variations in oven temperatures or baking times due to differing sizes or composition of utensils
• Maintains work area in an orderly and sanitary condition and prepares and stores food by proper sanitation standards as stated in the local preventative medicine policy
• Sweeps and mops floors, washes shelves, tables, sinks, equipment, and work areas
• Perform other duties as assigned

QUALIFICATIONS, EDUCATION, & EXPERIENCE:
The following qualifications represent the training, education, certifications, licensures, and/or work experience required to perform the essential duties and responsibilities successfully: Related job experience providing custodial services.
• High school diploma and a diploma from a culinary school, or at least 2 years of commercial cooking experience
• Knowledge of basic nutrition and ability to interpret recipes
• Knowledge of special and modified diets such as high protein, low protein, low cholesterol, low fat, low calorie, and low sodium
• Ability to operate, break down, and clean all types of food service equipment
• Ability and knowledge to carry out a comprehensive cleaning schedule in the kitchen environment
• Ability to multitask; prepares many items simultaneously and can meet quality and time requirements
• Experience in using cutting tools, cookware, and bakeware and knowledge of various cooking procedures and methods (grilling, baking, boiling, etc.)
• Capable of following all sanitation procedures
• Ability to work in a team, maintaining courteous and respectful relationships with coworkers and customers; interacts with coworkers, staff members, and patients in a courteous and professional manner
• Excellent communication skills
PHYSICAL DEMANDS & WORK ENVIRONMENT:
Physical demands: Performing the duties of this job requires near visual acuity, the ability to hear, understand, and distinguish speech and/or other sounds, and gross manipulation. Additionally, the employee:
- Must be free of communicable diseases, including tuberculosis in a communicable form
- Must be able to exert considerable effort, frequently lifting/moving up to 50lbs, bending, reaching, and squatting
- Must be able to stand for four or more hours
Work environment: While performing the duties of this job, the employee will work primarily in a commercial kitchen with potential exposure to hazards typical of this environment. The noise level in the work environment is loud with frequent interruptions.
