The Demi Chef de Partie (Continental) is responsible for supporting the Chef de Partie in managing a specific section of the kitchen. You will ensure that Continental cuisine—ranging from European classics to modern Mediterranean dishes—is prepared to the highest standards. This role requires a blend of culinary skill, speed, and the ability to supervise junior cooks while maintaining strict hygiene protocols.
KEY RESPONSIBILITIES:
- Culinary Execution: Prepare, cook, and present Continental dishes (including stocks, sauces, cold salads, grilled meats, and pastas) according to established recipes and presentation standards.
- Section Management: Oversee the daily operations of the Continental section, ensuring mise-en-place is completed before each service.
- Quality Control: Taste food items consistently to ensure flavor profiles, seasoning, and temperatures meet brand standards.
- Stock Coordination: Assist in monitoring inventory levels, raising requisitions for dry stores and fresh produce, and ensuring minimal wastage through First-In-First-Out (FIFO) practices.
- Leadership: Supervise and train Commis chefs and kitchen helpers, ensuring they follow technical instructions and safety procedures.
- Health & Safety: Maintain a clean and organized workstation. Adhere to all food safety regulations, including HACCP and local municipal health standards.
