SAPA Bakery, a unit of Kaffeeklatsch Hospitality LLP, is growing our team! We are seeking a skilled and dedicated DCDP Pastry to support pastry production at our Gokulam location in Mysore.
About the Role:
As DCDP Pastry, you will assist in executing daily production of high-quality pastries, viennoiseries, confections, custom cakes, and table scapes, while contributing to R&D and upholding precision and innovation. This hands-on deputy role requires strong fundamentals in French patisserie, viennoiserie, and chocolate work in a dynamic artisan bakery environment.
Key Responsibilities:
- Assist in executing and refining recipes for confections, viennoiserie, catering, table scapes, pastries, tarts, eclairs, and more; support R&D for new counter products, ingredient prep, costing, and training juniors on techniques and tastings.
- Help prepare custom design cakes and table scapes tailored to client needs.
- Support daily pastry/viennoiserie production, shift tasks, new team member onboarding, SOP adherence, hygiene standards, daily briefings, and weekly tastings.
- Maintain production sheets, costing sheets, indents, cost variance tracking, menu execution, and smooth handovers to FOH—ensuring absolute quality.
- Assist in optimizing schedules, custom order prep, and ensuring timely deliveries.
What We’re Looking For:
- Proven experience as DCDP Pastry or equivalent in a professional bakery/pastry environment.
- Strong fundamentals in French patisserie, viennoiserie, chocolate work, and recipe execution.
- Skills in supporting juniors, production planning, costing basics, and menu engineering.
- Passion for innovation, precision, quality, and efficient operations under pressure.
- Collaborative mindset with drive for team excellence and continuous learning.
