Job Summary: Commis-I/Commis-2 (Continental & Indian) is responsible for preparing, cooking, and presenting dishes according to the restaurant’s high-end standards. The role requires strong knowledge of Continental and Indian cuisine, strict adherence to food safety, hygiene, and quality standards, and the ability to work efficiently in a fast-paced cloud kitchen environment.
Key Responsibilities
Food Preparation & Cooking
● Prepare and cook Continental and Indian dishes as per standard recipes.
● Ensure consistency in taste, portion size, and presentation.
● Assist Chef de Partie in mise-en-place preparation before service.
● Maintain high-quality plating standards suitable for fine dining.
● Follow proper cooking techniques such as sautéing, grilling, steaming, stir-frying, and sauce preparation.
Kitchen Operations
● Ensure smooth kitchen operations during service hours.
● Maintain cleanliness and organization of the workstation and kitchen equipment.
● Coordinate with Commis-II and kitchen helpers during preparation and service.
● Ensure ingredients are fresh, properly stored, and labeled.
Teamwork & Communication
● Work closely with Sous Chef, Chef de Partie, and kitchen team.
● Support junior staff and help maintain efficient workflow.
● Communicate effectively during busy service hours.
Skills & Competencies
● Strong knowledge of Continental cuisine
● Strong knowledge of Indian cuisine (North Indian, South Indian, regional specialties)
● Knife skills and ingredient preparation
● Sauce preparation and plating techniques
● Time management during service
● Teamwork and communication skills
● Attention to detail
Qualification & Experience
● Diploma / Degree in Hotel Management or Culinary Arts
● 3-6 years of experience in Continental or Indian kitchen or cloud kitchens is highly preferred.
Knowledge Requirements
● Continental sauces (béchamel, velouté, demi-glace, etc.)
● Deep understanding of Tandoor, Curry/Gravy sections, and spice blending.
● Indian gravies and masalas (makhani, korma, vindaloo, chettinad, etc.)
● Basic stock and soup preparation, deep knowledge of temperature control for different proteins.
Qualifications
- Proficiency in Food Preparation and Culinary Skills with a passion for creating high-quality dishes
- Strong understanding of Hygiene and food safety standards
- Basic Cooking experience and a willingness to learn new techniques
- Effective Communication skills for collaborating with the kitchen team
- Ability to work well in a fast-paced, dynamic environment
- Relevant culinary education or training is a plus
- Prior experience in food service or kitchen environments is advantageous
