Role SummaryWe are looking for a skilled and passionate Commi 1 – Tandoor to join our culinary team in Mumbai. In this role, you will be responsible for managing the day-to-day operations of the Tandoor section, ensuring the highest standards of food quality, taste, and presentation. Success in this position looks like consistently delivering perfectly executed tandoor dishes, maintaining high kitchen hygiene, and collaborating smoothly with the broader kitchen crew to ensure an exceptional guest dining experience.
Responsibilities- Food Preparation & Cooking: Prepare, marinate, and cook a high volume of authentic tandoor items (breads, kebabs, tikkas) according to standardized recipes and quality benchmarks.
- Station Management: Manage the tandoor station efficiently, monitoring heat levels and ensuring all clay ovens are properly maintained and operational.
- Inventory & Portion Control: Assist in monitoring stock levels, minimizing food wastage, and ensuring strict portion control for consistency.
- Hygiene & Food Safety: Maintain impeccable cleanliness and sanitation standards at the workstation in strict compliance with food safety regulations.
- Team Collaboration: Work closely with the Commi 2, Commi 3, and the Chef de Partie to ensure smooth kitchen operations and timely order ticket completion.
Qualifications- Experience: 2–4 years of proven culinary experience specializing in the Tandoor section, preferably in a standalone casual/fine-dining restaurant or hotel.
- Skills: Deep knowledge of marinations, spice blends, and mastery over tandoor temperature control.
- Fitness & Stamina: Ability to work efficiently in a fast-paced, high-temperature kitchen environment.
- Teamwork: Excellent collaboration and communication skills within a diverse kitchen team.
- Education: A degree or diploma in Culinary Arts or Hotel Management is a plus, but exceptional practical skill and experience are highly valued.
