Role Description The Cluster Executive Chef/Corporate Chef is a full-time, on-site role based in South Delhi, overseeing culinary operations across Peepal Restaurants’ outlets. This position is responsible for designing and updating menus, standardizing recipes, and ensuring consistent food quality and presentation that reflect each brand’s identity. The role includes managing existing kitchen teams, training and mentoring culinary staff, and coordinating staffing schedules to maintain efficient operations.
The Cluster Executive Chef/Corporate Chef will manage food costing, inventory, vendor relationships, and hygiene standards in line with sustainability and safety practices. Day-to-day tasks also include collaborating with management on new concepts, supporting marketing initiatives with culinary input, monitoring guest feedback, and continuously improving the overall dining experience.
Qualifications
Professional Qualification: IHM Background
Essential Knowledge of HACCP, GMP & FSSAI rules with
- Strong culinary expertise with proven experience leading kitchen operations in multi-outlet or cluster environments, preferably in casual dining and upscale restaurant/bar formats.
- Menu development and food innovation skills, including recipe standardization, plating design, and alignment with brand positioning and sustainability practices.
- Team leadership and people management capabilities, including staff training, performance management, and building a collaborative, inclusive kitchen culture.
- Operational and financial skills, such as food costing, inventory control, vendor management, and adherence to cost-efficiency targets.
- Knowledge of food safety, hygiene standards, and regulatory compliance, with a focus on sustainable kitchen practices and waste reduction.
- Strong communication and coordination skills for working closely with restaurant management, front-of-house teams, and marketing for promotions and events.
- prior experience as an Executive Chef (5-6 Years in the well known reputedChains) or Corporate Chef is highly desirable.
- Ability to work on-site, adapt to a fast-paced environment, and maintain high standards during peak service hours and special events.
- He/She must be proactive in handling of VIP's /State dignitaries.
- He /She must be adept in kitchen & SOP's formulation including MIS and well versed with the sheets.
