Role Purpose
The Brand Chef – Mag St. is the custodian of the brand’s culinary identity, responsible for delivering a modern, globally inspired restaurant experience rooted in Italian, Asian and international comfort cuisine.
Mag St. in Mumbai serves a creative blend of all-day comfort dishes and international flavors, combining approachable food with elevated presentation and high-quality ingredients. The Brand Chef ensures this philosophy is consistently executed across all outlets while driving innovation, guest satisfaction, and commercial success.
Key Responsibilities
Culinary Identity & Brand Positioning
Define and evolve MAG St.’s Italian and global comfort cuisine positioning within a premium restaurant/cafe format.
Ensure menus reflect a creative mix of all-day café dishes and international flavors, balancing familiarity with innovation.
Establish signature dishes, flavor profiles, and plating styles that strengthen brand recall.
Maintain a balance between comfort-driven, indulgent, and trend-forward offerings.
Menu Innovation & Product Development
Develop seasonal menus, all-day dining offerings, and style innovations aligned with the brand.
Introduce globally relevant dishes while keeping them approachable and commercially viable.
Focus on ingredient-driven cooking, emphasizing freshness, simplicity, and quality.
Standardize recipes and presentation for consistency across outlets.
Multi-Outlet Culinary Oversight
Ensure all outlets consistently deliver high-quality Italian, Asian and global comfort dishes.
Conduct audits to maintain uniform taste, presentation, and portion control.
Guide outlet chefs in maintaining both creative excellence and operational discipline.
Guest Experience & Brand Alignment
Drive a relaxed, restaurant experience aligned with the dining trends.
Ensure dishes are visually appealing, shareable, and high on recall value.
Continuously refine menus based on guest feedback and consumption patterns.
Cost Control & Commercial Performance
Engineer menus that balance premium positioning with strong profitability.
Optimize food cost without compromising on quality or brand promise.
Drive revenue through menu mix optimization and best-seller strategies.
Sales, Marketing & Brand Storytelling
Collaborate on menu storytelling, food styling, and campaign ideation.
Support digital presence through visually engaging and trend-relevant dishes.
Represent the brand in media, collaborations, and culinary events.
Compliance & Food Safety
Ensure strict adherence to food safety, hygiene, and regulatory standards.
Maintain audit readiness across all units.
People Development & Culture
Train teams in cuisine fundamentals, global food execution, and modern restaurant/café presentation.
Build a culture of creativity, consistency, and ownership.
Develop strong second-line leadership across outlets.
Key Competencies
Strong expertise in Italian and Asian cuisine and global food
Deep understanding of restaurant dining formats
High level of aesthetic and plating sensibility
Strong business and cost management skills
Proven multi-unit leadership capability

Qualifications & Experience
Degree/Diploma in Culinary Arts / Hotel Management
12–15 years of experience with at least 5 years in a leadership role
Strong background in Italian and Asian cuisine, restaurant formats, and international food
Experience in premium casual dining / lifestyle brands preferred.
