Role Purpose
Own everything flour, dough and bread at Hundo. The dough is the heart of the product — this role is the custodian of that heart, with the science, the hands and the experience to scale it cleanly across the network.
Key Responsibilities
• Lead all bakery and dough production at the central kitchen — pizza dough, focaccia, breads, par-bakes and extensions.
• Own the science: hydration, fermentation, yeast management, flour blending, retarding, proofing, bake profiles.
• Build and maintain dough specifications, batch records, fermentation logs and bake schedules.
• Manage the bakery equipment stack: spiral mixers, retarder-proofers, deck / convection / impingement ovens.
• Partner with R&D Chef on new bread, crust and bakery extensions.
• Train and certify dough handlers across outlets; own quality at the last mile.
• Drive yield, wastage and cost discipline in the bakery section.
Must Have
• 8+ years of bakery experience; deep love for flour, dough, fermentation and bread.
• Strong scientific understanding of dough chemistry — not just recipes by rote.
• Premium bakery, hotel bakery, artisan bakery or specialty pizza dough background.
• Hands-on with bulk dough production and modern bakery equipment.
• Able to scale a recipe from 5 kg to 500 kg without losing the product.
Good to Have
• Pizza-specific dough experience (Neapolitan, Roman, NY, sourdough, cold-fermented).
• Exposure to par-baked / frozen-dough production models.
• Formal bakery training or international certification.
Success Metrics / KPIs
• Dough consistency across batches (hydration, weight, fermentation).
• Wastage and yield in the bakery section.
• Outlet-level bake quality scores.
• On-time, in-spec central kitchen dispatch.
